Tasty Tuesdays - Spicy Chicken Chili

This has been given the new name:
WHO DAT CHILI- it is our new game day food!
Super Quick & Easy-
 GEAUX SAINTS!


Have you ever wondered just how long is too long to keep food in your fridge?
Well, wonder no longer ladies!! I found an awesome website, Still Tasty that will
answer all your questions and give you a wealth of info:)
I made this on Sunday and let me tell ya....it was SUPER DELISH!
I doubled everything...I personally think it could have use 3x {even4} the # of jalapenos.
Instead of chicken tenders, I pulled apart an entire rotisserie chicken.
PEFECT! I used all organic ingredients and served it over organic brown rice...... about as healthy as I could make it-
INGREDIENTS

  1. 2 tablespoons cooking oil
  2. 1 onion, chopped
  3. 2 cloves garlic, minced
  4. 1 pound skinless chicken thighs (about 4), cut into thin strips
  5. 4 teaspoons chili powder
  6. 1 tablespoon ground cumin
  7. 2 teaspoons dried oregano
  8. 1 teaspoon salt
  9. 2 jalapeƱo peppers, seeds and ribs removed, chopped
  10. 1 1/2 cups canned crushed tomatoes with their juice
  11. 2 1/2 cups canned low-sodium chicken broth or homemade stock
  12. 1 2/3 cups drained and rinsed pinto beans (from one 15-ounce can)
  13. 1 2/3 cups drained and rinsed black beans (from one 15-ounce can)
  14. 1/2 teaspoon fresh-ground black pepper
  15. 1/3 cup chopped cilantro (optional)
  16. DIRECTIONS
  1. In a large saucepan, heat the oil over moderately low heat. Add the onion and garlic; cook until they start to soften, about 3 minutes.
  2. Increase the heat to moderate and stir in the chicken strips. Cook until they are no longer pink, about 2 minutes. Stir in the chili powder, cumin, oregano, and salt. Add the jalapeƱos, the tomatoes with their juice, and the broth. Bring to a boil, reduce the heat, cover, and simmer for 15 minutes.
  3. Uncover the saucepan and stir in the beans and black pepper. Simmer until the chili is thickened, about 15 minutes longer. Serve topped with the cilantro.

Walkers, Joggers, Runners, Whatevers...check this!

after several years off because of a stress fracture in my foot upon completion of my first 1/2 marathon, gave up, quit  I had to take some time off.
After my foot healed, my hip & knee started giving me fits so I was hit or miss on the running circuit.
That 1/2 reallllllly did my body in.
Guess I'm a wimp ;p
I recently decided to try to "trick" my body back into running.
{so far, I think it's working!}
I saw something about the C25K on Facebook and read more into it..
"Couch to 5K"...

You will learn, when I start/do something, I have to get all the gadgets, etc :)
I feel if I invest the $$ I'm more likely to follow through!
