i made this last night and let me tell y'all, it did not disappoint!
(this was my spin, original version is from here)

(it was even good this morning cold for breakfast!)
ingredients:
-4-5 boneless skinless chicken breasts
-1 cup whole wheat flour
-1 slightly beaten egg white
-1/4 cup of canola oil
- salt & pepper to taste
directions:
-preheat oven to 375
-put flour and s/p in lg zip lock, place 1 piece of chicken in at a time and shake up up to coat completely, set aside
-add the oil to a cast iron skillet on med heat (oil is ready when u can drop a pinch of flour and it starts to sizzle)
-place each piece in skillet, brown on each side for approx 7-8 min
-remove skillet from stove and straight to oven, uncovered
-cook for 15 min on each side
- lay on napkin to remove excess oil ( won't be much)
-ENJOY!!!
i'm going to do this with some fish and shrimp this week. totally yum!

This looks mouth watering. This is good food for diet conscious that cannot affect the taste. I will try this and also for fish and shrimp. This is the perfect finger food.
