i am sharing THE BEST & easiest salad recipe...
it's as clean & healthy as you can get a chicken salad, y'all.
it will make paula deen want to slap her momma!
ingredients:
3-4 chicken breasts
1 avocado
1/2 greek yogurt
1/3 cup chopped almonds or pecans
salt/pepper to taste
{ofcourse you can add anything else you'd like & add less/more yogurt depending upon your taste}
directions:
boil the chicken breasts til done (abt 7-8 min)
scoop out the entire avocado
throw everything in a food processor, pulse til blended
TADA!!
i threw mine on a bed of baby spinach and ate with a few wheat crackers
this would be a great side dish to take for thanksgiving or a holiday get together, seriously takes no time at all. you could even pull apart a rotisserie chicken to make it.
{i have since become a vegetarian since i made this and honestly,
if i was to eat any meat right now, THIS would be at the top of the list!!!}
